Katy Paxson, executive chef at Grandview Medical Center, has been recognized as a Culinary Creations Top 10 chef by Premier Inc. following a nationwide recipe contest.
This year’s theme, On Trend Bowls, challenged foodservice members to create bowls that maximized fresh ingredients, used minimally processed foods and remained low in sodium and sugars, while incorporating modern sauces, bold flavors and maintaining an appetizing appearance.
Chef Paxson’s entry is a Chipotle Steak N’ Sweet Potato Noodle Bowl. It consists of spiraled sweet potato sautéed with corn, kale and red peppers in a lite pineapple sauce, with thinly sliced, smoked chipotle rubbed flat iron steak, topped with chimichurri (lime cilantro) sauce. The chimichurri sauce adds flavor without adding a lot of salt or fat. The dish boasts contrasting sweet and spicy flavors.
“I was surprised and delighted to be selected as a Top 10 chef,” Chef Paxson says. “This is the first time I’ve submitted a recipe for any contest. I do try to make food that is fresh and minimally processed for Grandview. We revamped the cafeteria menu about a year ago to incorporate fresh entrees and we are always looking to improve what we serve. The patient menu is mostly fresh food. I appreciate all the support and opportunities that Grandview has given me that led to this honor by Premier Inc.”
